
Without a doubt, meatballs is the best known of all Swedish dishes, traditionally served with potatoes, lingonberry jam and cream sauce.
Now as usual when we don’t have or can’t get ingredients for a recipe we make it up as we go along. So we bought some Swedish meatballs at a local Swedish supermarket which also happened to sell cream. IKEA closed so no lingonberry jam fotunately sister Angela had given us some blackberry and apple which as it happens was beautiful with meatballs. We did have potatoes but we did a quick raid (in good Viking spirit) on the motorhome and retrieved all our holiday food stash. As you all will know Smash is delicious, keeps well and heats up very quickly so was in our van food stash😄😄. The menu should have included pickled gherkins, we didn’t have any so we used capers. We also suplimented the green salad with loads of fresh herbs out of the garden.
It was delicious and we thoroughly enjoyed it😄😄
